Ive been making sour dough bread for 5 months... I just now purchased a banneton (2 actually) and made my 2nd sour dough bread with a banneton - I did not use the fabric liner this time, just dusted the Banneton itself with bread flour (includes a brush to spread it around) . I purchased the 10 inch one and feel it's the right size as it worked well for my small loaf (and no doubt it will be good for a large one too). Photos show the result first time using this one and I really liked how clean/easy it was to use for proofing - especially cause there was No sticking ... Definitely better than a Pyrex with a tea towel (found my tea towels were getting little bits stuck in them). I proof the dough in the Banneton in the fridge for 12 hours with a tea towel on top (not on the sides) before baking and I felt the loaf held its shape better (I think it's letting the dough dry a bit allowing it to better hold its shape). Wish I bought these sooner. Recommended.
The kit is not like Wilton material but good enough to get the same result. The cloth and the extra tools is a little like dollar store but you can easily replace those. Those are extra and the most important is the rattan bowl. The size and design is good for this price range. Got this for lock down project and wanted to try this tool. I replace the cloth so there is still cover and the dough is not touching the rattan material directly. I use a wet cloth and paper towel to clean the rattan. I don't know if they spray anything to keep it bug free so is better to clean it first and make sure do not wash it with water directly. That will make it mold and not safe for food.
A few ways to let the dough fall out easily is to over flour or use corn starch and water overnight before using. It holds the shape really well does what it's expected to do. I first made a focaccia with it and then sourdough bread. Package comes with useful tools that will help you cut the dough compared to using a knife.
