I pre-ordered the book to spice up my "New Year New You" plans. I am aiming to try at least two new recipes a week!
So far (17 January) I have tried eight of Niki's recipes "as written" and used elements of others to add interest to simple plant-based meals.
I love this book!
While some of the recipes look complex, they are broken down into logical parts: marinades, dressings, main salad / dish, toppings. You don't have to do everything at once! I love how you can choose to layer the flavours, according to how much time you have or what is lurking in the fridge.
Last night I got home tired and cold and honestly couldn't be bothered to cook, but when I found a sad aubergine sitting forlornly in the fridge, I turned to the Rebel Recipes index and rummaged a bit further... An hour of happy cooking adventures later, I was sitting down to an amazing Layered Aubergine Pesto Bake, which not only tasted fabulous, but also used up all the leftover vegetables from earlier in the week. Plus two extra portions to freeze for another day!
Well worth the effort!

From the easy to follow steps, the breakdown of store cupboard essentials and the recipes and pictures that pop the food right off the pages, this really has inspired me to try new things and expand my culinary horizons!
I’m not (yet) vegan myself but I’ve always found that doesn’t matter as Niki’s recipes are packed full of flavour and nutritious delights and this book is full of new recipes so I now have no excuse to continue with my goal to cut down on meat based dishes and what better time to start than Veganuary... but I know this book is the perfect place to start any time of the year!
So, vegan or not, I thoroughly recommend this book and everything Rebel Recipes to you... your tastebuds will thank you later!
