Trained in the science of Nutrition at Rosalind Franklin University of Science and Medicine, Carol has generously shared recipes to reclaim your health and life. Eating this way can reverse heart disease, improve and often reverse diabetes, reduce your risk of cancer, osteoporosis, stroke, dementia and autoimmune disorders. I invite you to bring her recipes to life with all the joy and celebration she constantly shares. This is what I observe when she teaches healthful cooking to my patients at the Michael E. Debakey Institute in Kenosha Wisconsin. It is an honor to celebrate the first printing of this cookbook and resource guide. Kevin J. Fullin MD FACC Medical Director Michael E. Debakey Heart institute Kenosha Wisconsin Carol D'Anca is a leader in the use of plant based, whole food nutrition, especially in the prevention and reversal of chronic illness. Real Food for Healthy People is one of those books that stand out for me. I must state here, that I have not completely finished reading it, but am very impressed with what I have read so far. The author has sifted through her knowledge and come up with a very workable plan, for her own clients, to significantly improve health and avoid chronic disease by the use of nutrition alone.
There is a full list of ingredients and equipment needed for proper food preparation, and the recipes are delicious and beautifully illustrated. I can't wait to start implementing them in my own kitchen!

Her culinary training in Italy shines through in many of the recipes. The blend of flavors and ingredients showcase just how tasty it can be to eat well, inspiring you to explore and try more. The flavors are bright and enticing, yet contain very little of the fat of normal recipes.
Not only are the recipes delicious, but she explains each recipe so that they can be adapted to other vegetables you have on hand. And her beginning chapters on foundational culinary skills and stocking “the basics”, with her attention to individual spices and herbs for their health benefits, sets up your pantry and kitchen for success, in making the change over to a healthier, tastier way of eating. A bonus - her recipes, including her desserts and snacks, are gluten free.
