Really lovely books and I was really excited to use this book. Bank holiday weekend and I thought I would get started. Please note that I have made many macarons and wanted to use this book to perfect my method.
So... I measured everything using the grams and found that the mix was so thick I couldn’t even mix it... it was like cement. I had to put it all in the bin and sat deliberating what could have gone wrong. Then I saw that the conversations of cups to grams were wrong! How can 1 1/4 cups be the same as a 3/4 of DRY ingredients?!
I did an online conversation and taking into account that the conversation can vary I soon saw that 1 1/4 should be approx 144g and that the icing sugar (using the same converter) should be approx 105g. Different... not the same!
If you use this book be very careful as it will waste time and money! Not impressed. Not acceptable!
