After reading all reviews I was hoping this will be a worth investment to enjoy my Dutch cheese collection. To my disappointment I am still struggling to use is after few weeks and my standard knife cuts much better. I should have stayed with cheaper old fashioned cheese slicer after all.
It only took a couple slices on hard cheese to cause the wire to become loose, no tension, completely flexible. Instead of using the replacement wire (which I am certain would cause the same issue), I opted for a new electric guitar g-string, this proved that once you do use that replacement string you are in for a world of tinkering to get the length/tension right (1, for it to fit, the slightest bit short and forget it fitting... and 2, for the wire to be tight enough to cut sufficiently). After getting the right length & tension, which made a nice high pitched "ping" sound upon plucking, it sliced so much better than original, practically sinking through the cheese, then after a few slices, it begins to lose tension and that "ping" is gone. Not impressed, the major fault I see is that the device requires a tension screw so that 1) replacing the string can be done loose and tightened. and 2) as the wire loosens with use, the tension could be adjusted. It's ridiculous that this lacks such a feature when it loses tension so easily. The two wires didn't even make it through a single 500g block of cheese. I plan to go back to using a knife.
I was looking for a wire hand-held cheese slicer that was wider than 4 inches. Thought this would do the trick. It is sturdy enough, and wide enough; all metal, no plastic. The wire can be adjusted for thickness; however, it does not slice evenly. (Maybe I am doing it wrong). It was nice to get a free replacement wire with my order. It bugs me that the screws that adjust the thickness do not seem to hold and I am constantly adjusting them. I will be looking for another wide cheese slicer down the road.
