The first batch with this biscuit pan stuck. Although I was able to salvage most of the cookies, there were a lot of stuck on crumbs which I had to remove with water and a plastic bristle brush. After thoroughly drying the pan, I oiled it up.
So if the cookies stuck, why did I give the pan 5 stars? The pan is great. It was produced by craftsman and has a great metal finish topped by a wonderful factory applied seasoning.
The cook made a mistake, that's me. I will use a bit more oil before putting the cookie dough in. I will lessen the preheat time a bit. I will experiment until I find how the biscuit pan wants to be used. Unlike other reviews where the user threw out the pan because the food stuck and could not be removed, I understand cast iron and will listen to what it tells me.
After I get the cookies figured out, I will try some beer biscuits, which should be fantastic in cast iron.
Oh, and by the way, the cookies were still great, crisp on the outside and still soft inside. With a glass of cold milk, yum.
