As a long time espresso drinker I was skeptical about this product, but it's totally changed my coffee habits.
I bought a v60 at the same time as an aeropress and at first I used the aeropress exclusively because it's quick and gives reliably good coffee. I couldn't be bothered to weigh out my coffee and water etc... but once I decided to give this a proper go I have not looked back. It does take a little longer to prepare with weighing and pouring but it's totally worth it. I thought I enjoyed coffee before but this has ruined espresso for me. Every coffee I make is now delicious and smooth, without any of the harsh bitterness of an espresso. I actually prefer my own pourover coffee to my previously beloved local barista's concoctions. So I'm saving a fortune and loving every moment of it!
The main downside of this is that it is a bit of a hassle to make multiple cups. I tend to use a plunger if there's more than two people wanting a drink.
My pourover set now includes a knock Aergrind, Coffee Gator kettle and this v60 with paper filters (using the natural unbleached ones at the moment for better composting). The Aergrind was a little pricey but worth it, everything else is very reasonably priced. I use a kitchen scale that we already had to measure the coffee and pours, and I did use a timer app originally but don't really need it now. I tend to use the "4-6" method but most recipes I've tried give great results. If you're thinking about a home coffee setup, make the switch to pourover, you won't regret it!
