Libro interessante, forse più adatto a un pubblico USA che europeo. Aiuta a produrre il sidro - non molto in senso ecologico ma comunque attento alle infinite sfumature dei sapori e delle contaminazioni di sapori. Fornisce 80 ricette di cocktail e altro ed ha una impostazione manualistica alla portata di tutti. È da integrare ai capolavori assoluti di Jolicoeur e di Rodríguez sullo stesso tema.

This book, together with ""Cider, Hard & Sweet" were my first about making hard cider and, between the two of them, most of my questions were answered. Being a home-brewer, like the author, I appreciated the way he also included non-apple ingredients in some of his recipes, including hops and malt extract, as well as other fruits, vegetables, herbs, flowers, and spices, which purists would avoid. My only complaint is that he only spent a scant one page on the various yeast options and gave no information on the pros and cons of the most popular ones, or what you could expect from them flavour wise. Nor does he discuss (that I could find) how long to let cider age after packaging (before drinking), or how long it takes before it starts turning to vinegar. But overall this is a great primer.

Da un libro che si propone come "tutto sul sidro" mi aspettavo una trattazione più tecnica e meno scherzosa. Le ricette a base di sidro, a mio avviso, risultano superflue per chi vuole imparare a produrlo e non ad utilizzarlo.

Right on! Covers all of what you need to know, even more. The author is quite sharp. Also wrote Experimental Homebrewing among others. Cannot go wrong with him.

i didn't find this as useful as other cider making, wine making or brewing books that i own. would recommend True Brews instead
