Finally a book that deals with the issues of lean dried out chicken. The ideas in this book will help to create moist and tasty chicken breasts. I have made my share of dry chicken breasts. Following these recipes will improve your chicken breast meals. I have tried two recipes and they both turned out moist and tasty.
The book starts out with an introduction that discusses the issue of dry chicken breasts and then covers various ways to prepare your chicken breasts.
The first chapter gets right to the solutions and explains the five tastes you can experience with the recipes. There are a couple of things you can easily do to increase the moistness and flavor of chicken breasts. Using these approaches are the foundation for all the recipes. A little planning ahead and a few simple ingredients will get you started.
The rest of the book deals with different recipes for different cooking styles. Chapter Two is about baking/roasting chicken breasts. I tried the Roasted Chicken Breast with Balsamic Vinegar. It was easy to make and my family really liked it. There is a section titled Key Points to Roasting Your Chicken. This is very helpful as it gives you the points on one page and if you follow it things turn out great. This Key Points section is in each chapter of the recipes and I found them to be helpful.
Chapter Three is about Pan Frying or Stir Frying chicken. i tried the Stir Fried Chicken with Collard Greens and again it turned out great. Chapter Four has Deep Fried Recipes which look good and easy though I did not have a chance to try any recipes.
Chapter Five has recipes for grilling. and Chapter Six has steaming, boiling and poaching recipes. I have not typically prepared chicken that last way mentioned though it sounds interesting and a little different for me.
This book is well laid out and explains thing very clearly and easy to understand. If you are tried of eating dry chicken breasts and are looking for other ways to prepare chicken I highly recommend this book.
